This is a bit more advanced and we go into the growing of the grapes, the wine making process, wine allergies, what is organic,
aging wine, and so on.

In this class we teach you to be able to tell what kind of wine is in the glass without you being told. We start by eliminating what it’s
not, to figure out what it is. It’s a fun class and it really works.
“The History of Napa”
We taste all Napa wines and the hand out is all photos. We use those photos to tell a story that begins in 1868 with the first
commercial winery and does a “Six Degrees of Separation” to present day.
“Basic Food & Wine Pairing”
Using visual illustration, we learn the basic principles on matching the right wine with the right food. Also, learn what not to pair in
order to not destroy your food or wine.
“Why Cabernets Are King”
This is when we taste only Cabernets from 5 different regions around the world. We explore the history and politics. As well as the
scoring of wines. Wine Spectator Vs Robert Parker. We also talk about an interview I did with the owners of Guillams Winery from
Napa about wine scoring politics.
